Tasting Note
It’s so rare to see this kind of richness delivered with such precision. It pours bright yellow gold. The nose is very generous and complex with golden peach, hazelnut, buttered garlic toast, lemon and nutmeg spice. It is medium-full bodied, rich yet somehow so delicate and poised at the same time. Something rarely encountered, perhaps in Grand Cru white Burgundy. But there is also a ripeness, tropicality and ambiance that California chardonnays can exhibit. Almost perfect balance here, great focus and outstanding length. To be clear, this is not a lean, reductive, mineral chardonnay. And it is a real achievement. Tasted September 2025

Backgrounder
You are looking at one of the most expensive chardonnays yet made in Canada. On Seven is small, obscure chardonnay specialist based on an organic, very low yielding Four Mile Creek calcerous five-acre vineyard planted to Dijon clones in 2014/15. It is owned by wine enthusiasts Vittorio and Sula De Stefano and informed by power consultants Ann Sperling and Peter Gamble. On Seven also makes The Pursuit Chardonnay ($48) and Devotion Chardonnay ($68).  “On Seven Chardonnay” is a new bottling of a single barrel. It is wild fermented and aged in French oak. Only 30 cases produced.
